About the restaurant
Restaurant Papilio, located in Vysoké Újezd near Prague, is a project by chef Jan Knedla and his team. Located in a newly renovated villa overlooking the Albatross golf resort, it offers advanced fine dining with a focus on seasonality, locality and precise technique.
Papilia's cuisine is based on a tasting menu that changes seasonally and reflects the availability of fresh ingredients. Key ingredients include vegetables from its own farm, herbs, meat from Czech farms, and fish from domestic farms. Jan Knedla brings experience from leading Czech and foreign companies to the menu, preferring pure flavors, technical perfection, and aesthetic presentation.
The concept also includes a minimalist interior with an emphasis on natural materials, which enhances the dining experience. The restaurant has an open kitchen, so guests can watch the food being prepared live.
