Honza Vachuda

Amano is a modern Italian restaurant and part of the La Collezione family of Riccardo Lucque and Ondřej Rákosník. It was born from a passion for authentic Italian cuisine and has been based on quality ingredients, craftsmanship and seasonality from the very beginning.
The dominant feature of the open kitchen is the special Josper grill, which gives meat, fish and seafood an unmistakable taste and aroma. The grill is literally the heart of the restaurant and is prescribed in almost every course. Guests here indulge in premium quality aged meat, seafood with guazzetto sauce, as well as classic Italian pasta, risotto or homemade desserts, gelato and sorbets.
The restaurant also offers a tasting menu, which is a selection of the best of Amano. Under the leadership of chef Honza Vachuda, guests embark on a journey throughout Italy - from antipasti to dolci. "Amano" means "to love", and the restaurant also combines the love of food, honesty and respect for ingredients.
The restaurant's atmosphere is complemented by an industrial interior and a friendly, family-like approach to guests. Amano proves that high-end gastronomy can also be family-friendly. He cares about sustainability, works with seasonal ingredients and tries to minimize waste.
Honza Vachuda started cooking as a little boy, when he assisted his father at home. He cooked his first meal – sirloin steak in cream – at the age of nine. He turned to gastronomy fully after graduating from a mechanical engineering school, when he decided to train as a chef-waiter.
He worked for nine years at the Prague restaurant Divinis under the management of Jan Kratochvíl, where he met his current sous-chef Tomáš Jetleb. He also gained experience at the Bresto restaurant before his path led him to the La Collezione chain, where he has been leading the Amano kitchen for four years.
"The biggest benefit for me was the space for self-realization, personal growth and creativity," says Honza. His current concept reflects his love for Italian cuisine and traditional products, which he uses with respect and sensitivity. The open kitchen and Josper grill complete the family atmosphere that is characteristic of Amano.
Honza's goal is not only to maintain the high standard of the establishment and gain more regular guests, but also to bring modern Italian gastronomy to a wider audience. The selected images demonstrate the breadth of Italian cuisine and connect tradition with a modern concept.
