Restaurace Amunì

Amunì

Massimo Giuliana

Amunì is an Italian pizzeria that combines the authentic taste of Italy, the quality of first-class ingredients and an unforgettable experience of nature. It has two branches in Prague – one right by the Charles Bridge with a view of the Vltava River and Prague Castle, the other in Vinohrady with a family atmosphere and a children's zone. Both spaces combine respect for tradition with a modern concept and create a pleasant place for everyday visits and special moments.
Amunì pushes the boundaries of classic pizza. They were the first in the Czech Republic to start preparing gourmet pizza, a concept that is increasingly popular and recognized in Italy – not only among food lovers, but also among Italians themselves. It is based on premium ingredients, innovative combinations of flavors and, above all, on a craft approach – from long-fermented dough to precise final preparation. In Italy, it is no longer just about the traditional Margherita – gourmet pizzerias are valued as modern gastronomy, often reminiscent of fine dining in a relaxed form. Amunì ranks among the pioneers in our country with this approach. It is inspired by the best of Italy and brings modern gastronomy in a light form.
Founder Massimo Giuliana, a native of Sicily, puts his passion and experience into the kitchen. The heart of each pizza is lievito madre – a proprietary wheat sourdough that gives the dough lightness, fluffiness and a crispy edge. The menu includes classic and gourmet pizzas prepared with ingredients such as San Marzano tomatoes, San Daniele prosciutto crudo or mozzarella di Antonio. The signature pizza is exceptional – San Daniele prosciutto crudo with burrata, mostarda di fichi and fior di latte, which represents the perfect balance of delicacy, elegance and intensity of flavors.
In addition to pizza, Amunì also offers homemade pasta, including gluten-free and lactose-free options, which will be appreciated by vegetarians and vegans. The sweet spot is Italian desserts – homemade gelato, pistachio tiramisu or traditional Sicilian cannoli. The menu is complemented by a carefully selected list of wines, cocktails and soft drinks.
The name Amunì in Sicilian dialect means “Let’s go!” and accurately describes the restaurant’s philosophy – to share the joy of food and the present moment. The cuisine is based on freshness and seasonality, whether it is light summer combinations with vegetables and herbs or winter dishes with pumpkin and mushrooms.
Massimo Giuliana emphasizes that he learned from his grandmother and grandfather, from bakers and Michelin-starred chefs, and a key experience for him was working with sourdough and fermentation. In the Amunì concept, he combines traditional recipes with a modern approach and the philosophy of slow food.
Amunì brings a new perspective on Italian gastronomy to Prague – honest, light and at the same time exceptional.
