In Vinohrady, just above the National Museum, you will find the Bílá kráva restaurant, which has been one of the most sought-after steakhouses in Prague since 1993. The name refers to the typical color of the Charolais breed – a French cattle breed whose meat plays a major role here.
The restaurant was established in cooperation with French breeding companies and the breeding company Natural s.r.o., which brought meat breeds to the Czech Republic. From the beginning, Bílá kráva has been based on an authentic French approach to meat – from the principles of proper slaughter and cutting to the culinary processing of individual parts. The menu is dominated by matured Charolais steaks, as well as traditional bourguignon, lamb from its own farm in Myštěves, and French delicacies such as snails and frog legs. Guests also appreciate the desserts, such as ice cream prepared with liquid nitrogen right at the table.
The chef Víťa Bajčanová is one of the few women at the helm of top-notch gastronomic establishments in our country. She comes from a farming family, where she was surrounded by slaughtering, canning and home cooking since childhood. Her first experience with a real professional kitchen came unexpectedly – 17 years ago, when the chef at the Cohiba restaurant in Vršovice fell ill and she had to take over the kitchen and responsibility. Guests quickly fell in love with her honest style and returned to her dishes. At Bílá kráva, she runs the kitchen with an emphasis on French tradition, but at the same time enriches it with new trends. She herself says that the basis is high-quality ingredients, enough time for preparation and the right seasoning and arrangement. All year round, guests can find lamb from their own breeding, Charolais beef and other specialties on the menu that combine French esprit with Czech honesty. “Discovering a new dish is more happiness than discovering a new star,” he adds as his culinary motto.
Thanks to its tradition, atmosphere reminiscent of the French countryside, and the approach of Vít Bajčanová and the entire team, Bílá Kráva is a fixture on the Prague gastronomic scene and a sought-after place for all lovers of meat and French cuisine.
