In the atrium of the most modern office building Envelopa Office Center in Olomouc is Bistro Paulus, a project of Michelin-starred chef Roman Paulus, who created a modern 21st-century establishment here. It combines classic Czech cuisine with inspirations he has drawn from throughout his career around the world – from Austria and Italy to France and Asia.
The interior of the bistro is clean, elegant and functional. The minimalist design is complemented by original elements – large-format tiles, upholstered booth seats or a massive chef’s table, which dominates the space. The heart of the establishment is a modern kitchen with a charcoal grill, where fresh, carefully selected ingredients from local suppliers are used.
Bistro Paulus is open from morning. Guests can start with breakfast, followed by a lunch menu from 11 a.m. with two soups, a selection of ready-made meals, grilled specialties, salads and desserts. Snacks, coffee, homemade lemonades, wines and gins from the Paulus Selection edition are available all day long. In the evening, the bistro is transformed into a space for cooking schools, tastings and social events.
An important role in the bistro is played by chef Petr Stoklásek, who worked alongside Roman Paulus at the Michelin-starred Alcron restaurant for six years. He also gained experience at the Schloss Hotel Dürnstein in Austria, the Hochfirst Hotel under the Ötztal Glacier, the Marriott in Prague and the Elitegourmet project. He returned to his native Hanau with the aim of raising the standard of everyday gastronomy.
Petr Stoklásek ensures that the team works perfectly together so that everything runs like clockwork in the kitchen and canteen. He often personally visits guests and asks for feedback, because he believes that this is the only way for the business to grow and develop. In his free time, he travels, discovers new gastronomic inspirations, skis, plays squash and is a passionate hockey fan.
Bistro Paulus is a place where the experience of Roman Paulus is combined with the energy and commitment of chef Petr Stoklásek - the result is a modern, imaginative and entertaining concept of Czech gastronomy in the heart of Olomouc.
