Butcher’s Grill & Pasta is an authentic American steakhouse in a quiet location near the center of Brno. It offers a unique concept combining traditional American cuisine with modern gastronomy. Guests will appreciate the elegant interior with an open kitchen, a summer terrace with a children’s and paddle tennis playground, and parking right in front of the restaurant.
The restaurant’s main focus is premium steaks. “Thanks to the careful selection of suppliers, the menu features top-quality meat from Czech breeds, American matured USDA Prime beef, or Argentine sirloin steak with the highest quality certification,” says Radim Fiala, co-owner of the restaurant
(in the middle of the photo). The restaurant has a unique grill with a temperature of up to 600 °C, whose smoker box for wood chips gives the meat an unmistakable smoky taste and aroma.
“Our cuisine is based on teamwork. We want to constantly improve the quality, level of preparation, and service,” explains sous-chef Jaroslav Walter (in the photo on the right). He recommends, for example, beef carpaccio, pork belly teriyaki with potato-sweet potato puree, New York strip steak, royal cheddar beef burger, fresh fish or pasta tagliolini with shrimp. The sweet spot is usually brownies or apple crumble.
Michal Roupec (in the photo on the left) was introduced to cooking by his mother, who was also a cook. He liked to help her as a child and soon knew that he wanted to follow the same path. After elementary school, he enrolled in a secondary food school in Brno and gained valuable experience in practice from colleagues from prestigious companies at home and abroad.
He began his professional career at the Interhotel Voroněž under the leadership of Jaroslav Floder, where he learned true respect for ingredients, professionalism and an eye for detail. He carries these values to this day.
He selected photos of three popular recipes for the 2026 guide – smoked beef tartare, cuttlefish tagliolini with shrimp and hoisin pork belly with mashed potatoes. “These are dishes that I enjoy with their honest taste and technique,” says Michal.
Butcher’s Grill & Pasta is based on the concept of an American steakhouse with international influences, but Michal also likes classic Czech cuisine – his favorite dish remains sirloin steak in cream. “Cook with joy, taste and always choose fresh and high-quality ingredients. That’s the basis of every good meal,” he adds.
