The iconic Grandhotel Pupp in Karlovy Vary has been a symbol of nobility and elegance for more than three centuries. A history dating back to 1701 gives the place a unique atmosphere that combines tradition, elegance and a sense of a real place with a story.
The cuisine of the hotel restaurant honors Czech tradition - whether in flavor combinations or in the emphasis on seasonality. At the same time, it is open to inspiration from world cuisines, as long as they bring guests a new and valuable experience. The direction of gastronomy is the result of a clear agreement between the hotel management and the kitchen, based on a shared vision, emphasis on quality and authenticity.
The uniqueness of the Grandrestaurant Pupp lies not only in the environment, but also in the culinary offer. The best example is the seven-course tasting Pupp menu - the restaurant's showcase and a proud presentation of Karlovy Vary through iconic local ingredients. Ingredients such as Mattoni, Becherovka, spa wafers or Karlovy Vary dumplings take on a new meaning here and become a worthy part of the modern fine dining scene.
Chef Ondřej Koráb is behind the kitchen, who gradually got into cooking - gastronomy won him over not only as a profession, but also as a lifelong passion. He trained at SOU and SOŠ U Krbu and completed his internship at the InterContinental Hotel. He also gained experience abroad, spending four years in London and almost a year in Toronto.
He worked, for example, in Michelin-starred restaurants Foliage*, Bar Boulud or Dinner by Heston Blumenthal. He was most impressed by his first foreign experience at Foliage, where he was attracted not only professionally but also personally by the style of chef Chris Staines.
His philosophy is based on respect for ingredients, honesty and precision. According to him, the key is a strong team, cleanliness in operation and thoughtful organization - without them, he believes, it is impossible to cook well. Creativity has its place in the kitchen, but it must not overpower an honest foundation. “Do things in a way that you don’t have to be ashamed of,” Ondřej Koráb summarizes his motto.
