Le Grill restaurant is part of the five-star The Grand Mark hotel, located just a few steps from the historic center of Prague in a 17th-century Baroque palace. It offers an elegant environment where historical charm and modern design are combined. The real jewel of the establishment is the unique private garden with a Baroque fountain and free-roaming peacocks. Every morning, guests are accompanied by live piano music for breakfast, and in the evening, a pianist, saxophonist or singing duo complete the atmosphere.
Le Grill is renowned for its combination of top-notch cuisine and precise service. It focuses on modern European cuisine with an emphasis on seasonality, freshness and local ingredients from small farmers. Under the leadership of chef Jaromír Hlavsa, dishes are created that combine tradition and innovation and are also prepared on the garden grill in the summer months. The interior is timeless, tastefully coordinated with natural materials, and in the summer the space naturally extends into the garden.
The signature dessert is The Grand Mark cake – a chocolate dessert with dark chocolate mousse and blackcurrant caviar. The menu changes every month according to the season and the drinks list includes Moravian and foreign wines, cocktails, homemade lemonades and infused waters.
The restaurant belongs to the only Czech member of the prestigious association The Leading Hotels of the World, which confirms its exceptional level.
Chef Jaromír Hlavsa got into cooking more by accident, but the kitchen quickly won him over. He started at the Alcron Hotel, where he learned from the top Czech gastronomy figures, including Zdeněk Pohlreich. This environment shaped him towards precision and respect for ingredients and people.
After a few years, he went to Great Britain, where he worked for nine years – among other things as the chef of the Malmaison Hotel in Manchester and the fine dining restaurant Linen. After returning to the Czech Republic, he accepted the position of assistant chef at the Augustine Hotel in Malá Strana.
Today, he heads the kitchen of The Grand Mark Prague as executive chef and is behind the concept of the Le Grill restaurant. He believes in seasonal ingredients, pure flavors and a fair approach. He supports local suppliers and his goal is simplicity that has depth. “Cooking is not just a job for me, it is a mission that I believe in and that still fulfills me,” reveals Jaromír Hlavsa.
