Restaurant Mlýnec is located right next to Charles Bridge and has been a fixture on the Prague gastronomic scene for a quarter of a century. It attracts guests with its unique location overlooking the Vltava River and Prague Castle, its elegant interior reminiscent of a mysterious garden, and above all, its cuisine that combines Czech traditions with world inspirations. The open kitchen brings energy to the space and allows guests to watch the work of the team that transforms local ingredients into unexpected experiences.
Chef Láďa Vaníček is behind the kitchen, who got into cooking more by accident. He originally wanted to play football, but when his classmates applied to be chefs after elementary school, he joined them. He gained decisive experience at the Le Palais hotel, where he learned the tough discipline of professional cuisine under the leadership of Radek Šubrt. At the age of 21, he became his assistant and soon after, chef. In 2014, he joined Mlýnec, where he worked his way through all sections of the kitchen, and since 2019, he has been leading the entire team.
What he values most about his work is creativity and finding new possibilities. He likes to experiment with fermentation, homemade tempeh, or cheese garum, which adds depth to sauces and risotto. He pays great attention to selecting farmers and small producers who think about ingredients comprehensively – from origin to sustainability to maximum use. “You can come up with almost anything, but in the end it’s always the guest who decides whether it makes sense,” he says. That’s why the menu at Mlýnec changes every month and reflects the season and the team’s current ideas.
The most popular permanent dishes include smoked veal tartare, veal schnitzel, or a carefully curated steak menu, which has been a draw for the restaurant for more than a decade. But Mlýnec also thinks about vegetarians and offers a special menu with thoughtful combinations of flavors.
The uniqueness of Mlýnec lies not only in the menu, but also in the atmosphere. Guests can experience a romantic dinner with a view of the illuminated Charles Bridge, a business lunch with a two- or three-course menu, a weekend brunch or an evening with wine pairing and original drinks. Every detail – from the selection of seasonal ingredients to the service to the environment – is thought out to make the visit an unforgettable experience.
Láďa Vaníček is proud not only of the kitchen, but also of the team that he rebuilt after the Covid break. Today, the stable team can serve hundreds of guests a day, and yet maintains energy and good spirits. “The atmosphere in the kitchen and on the set is reflected in the entire experience. Guests will recognize it,” adds the chef.
Today, Mlýnec represents modern fine dining with a Czech heart, global inspiration and a strong story – a place where the history of Prague combines with the trends of contemporary gastronomy.
