In the heart of Prague, at Na Perštýně 15, is the Monarch restaurant, an elegant steakhouse with an open kitchen and a Josper grill. The interior is modern yet cozy, making it an ideal place for a gourmet dinner, a business meeting, or a private celebration in an intimate lounge.
Monarch focuses on premium meat. Guests can sample USDA certified Black Angus, Czech beef, and the famous Galician Rubia Gallega from Spain. The restaurant matures its own meat to ensure it is always in top condition, and prepares it over charcoal in a Josper grill, which gives it a unique flavor and aroma. The goal is to show that a steak is not just a piece of meat, but a comprehensive experience, complemented by carefully selected wines from a rich wine program of over 800 labels from around the world and Moravia.
Chef Miroslav Vintrich is behind the kitchen, for whom gastronomy is a way of life. Although his formal studies were in IT management in England, cooking has attracted him since childhood. His great-grandfather was a butcher and his grandmother owned a butcher shop – thanks to them, he grew up in an environment where respect for meat and honest craftsmanship was a natural part of life. As a student, he spent hundreds of hours of self-study and practice in kitchens, cooking for friends and in a camp kitchen, where he prepared food for more than a hundred people a day.
He gained his first professional experience in a popular restaurant in Lovosice and soon after became part of the Monarch team, where he gradually took over the management of the kitchen. His philosophy is respect for raw materials – he likes to work with all parts of the animal and looks for ways to give them new meaning and taste. “Cooking means respecting the raw materials, the guest and the craft,” he sums up his approach to the profession.
Monarch is thus a place where world gastronomy meets Czech tradition and professional, but friendly service. Guests leave with the feeling that they experienced something unique – a harmony of flavors and an atmosphere that makes them want to return again and again.
