Štěpán Návrat

PRU58 is located in Prague's Holešovice. Its motto "sow, harvest and understand" suggests that it is not just another Asian restaurant, but a place that celebrates food, taste, sustainability and community. All dishes are created with the maximum use of local ingredients from Czech farmers and growers, while still maintaining an authentic Asian soul.
The interior was designed by designer Mario Wild in collaboration with owner Štěpán Návrat and his partner Veronika. Natural materials such as wood, stone and concrete screed are complemented by metal elements and scaffolding pipes, while the space is enlivened by exotic greenery, led by a five-meter fig tree imported from the Netherlands. The atmosphere combines industrial cleanliness with an Asian touch, creating a space where guests like to return.
The restaurant has two faces. During the day, it offers simple but precisely prepared dishes inspired by Asian street food, while in the evening the tasting menu takes over the main role. Guests can create a six- to eight-course tasting menu and choose between flexitarian, vegetarian, vegan, sushi or street food options. The evenings are complemented by special events, such as chef’s table or tuna slicing.
Chef and owner Štěpán Návrat is one of the prominent figures of contemporary Czech gastronomy. PRU58 opened at a time when most restaurants were closing due to the pandemic, showing courage and faith in the power of his vision. His approach is that he does not import ingredients from half the world, but collaborates with Czech farmers and looks for ways to create authentic Asian dishes from local products. The menu includes, for example, deer or quail, prepared with Asian playfulness and an emphasis on detail.
In addition to PRU58, Návrat is also behind the Katchi17 restaurant, which reflects his experience from his travels in Asia. The philosophy here is based on Japanese precision, respect for ingredients and a relaxed atmosphere.
Štěpán Návrat is not afraid of challenges or new directions. His restaurants prove that Asian cuisine can taste world-class in Prague – while remaining firmly rooted in local ingredients and traditions.
