Just a few minutes from the center of Prague, yet amidst vineyards and peaceful nature. Salabka Restaurant in Prague's Troja offers guests an experience that combines modern gastronomy, wine and the unique atmosphere of a historical area. The view of the vineyards, the proximity of the botanical and zoological gardens and the peace that you will not experience anywhere else in the city make Salabka an exceptional place.
The cuisine is based on modern European gastronomy with an emphasis on seasonal and local ingredients. The menu changes with the rhythm of nature and is designed exclusively as a tasting menu - guests will not find à la carte here. A tasting menu is offered with the option of wine pairing, both from the Salabka winery's own wines and from carefully selected world wines. Guests can also choose an option combining both worlds, i.e. a mix pairing. The Salabka winery, which is directly part of the area, makes the restaurant one of the few in Prague where top gastronomy is combined with wine literally next door.
Behind the kitchen is chef Petr Kunc, whose journey to cooking began as a child during his sister's holidays in Vienna, when he first tasted the world of top restaurants. He trained in Příbram, first gained experience in Prague, but working abroad was a crucial school for him.
He spent seven years in England and then in Bangkok, where he went through Michelin restaurants and learned precision, discipline and humility. He worked, for example, in Shrewsbury, Oxford, Newbury, London and Scotland.
His style is modern and playful, but always understandable and built on quality ingredients. "The kitchen must function like a Swiss watch - nothing can be cheated and everyone in the team must know what to do," says Petr Kunc. His philosophy is that food can tell a story - and guests should feel the season, locality and technique on their plate, which underlines the purity of taste.
Salabka is a place where gastronomy, wine and a personal approach come together. Guests will not find shocking experiments here, but honest, imaginative cooking that is on point. And the connection to the vineyard and winery, as well as a unique wine pairing offer, makes the experience even more complete - an atmosphere that allows guests to slow down and savor every moment.
