The Artisan restaurant is located in the center of Prague in the Marriott Hotel. The modern interior inspired by nature and the open kitchen create an environment where guests feel comfortable and relaxed. The atmosphere is friendly and informal, yet elegant.
The cuisine is based on local and seasonal ingredients, which are processed with maximum care and often without residue. Honey from the hotel's own beehives on the roof, herbs from the greenhouse and fermented ingredients add personality and depth to the dishes.
The menu is based on a modern concept of Czech gastronomy, which honors tradition, but is not afraid of new techniques and ideas.
The Artisan connects gastronomy with a story. Sustainability, respect for ingredients and close cooperation with a community of local suppliers give each dish a clear identity. Guests leave not only satisfied, but also with a new perspective on Czech cuisine.
The restaurant's chef David Rejhon got into cooking as a child, when he spent time in the kitchen with his grandmother. A coincidence turned into a passion that led him to an apprenticeship at the Ambassador Zlatá Husa restaurant. He gained work experience in Switzerland, the USA and especially in Asia, which influenced him the most. Bangkok and its street food showed him that even ordinary food can have unexpected depth. He took precision and order from France, and freedom and diversity from Asia.
Today, he builds on simplicity and quality ingredients, which he processes with respect and honesty. He draws a lot from his grandmother's principles - throw nothing away, use everything. That is why fermentation, his own honey and traditional recipes in a modern form are typical for his cuisine.
His goal is for guests to feel freshness, honesty and quality. He shows that Czech cuisine can be modern and sustainable without losing its connection to tradition.
