On Maltézské náměstí in Prague you will find one of the oldest restaurants in Europe – U Malířů, whose history dates back to 1543. According to preserved records, Emperor Rudolf II also visited here. The restaurant’s current appearance is the result of a reconstruction from 1936–1937, when impressive wall frescoes were created. Together with vaulted ceilings, period furniture and an intimate division of space, these create an atmosphere of nobility and tranquility. In addition to the main rooms, there is also a private club with a piano, ideal for intimate events and meetings.
The kitchen is headed by Miroslav Doležal, who has been working here for more than ten years. He comes from Zlín, where he gained his first cooking experience at the Zámecká restaurant and then at the Augustiniánský dům hotel. He also broadened his horizons abroad, for example during his stay in Singapore, where he cooked for the embassy and ambassadors. His culinary style stems from his love of Czech cuisine, which he likes to combine with French elegance and refinement.
In his cuisine, the main role is played by the taste, appearance and emotions that food can evoke in the guest. According to him, each course should have its own story and leave an impression – not only taste, but also visual.
His style is rather elegant, based on clean lines, precise work and harmony on the plate. He follows modern trends, but always retains his own signature and a sense of balance between classic cuisine and contemporary concepts.
The restaurant offers the Bohemia and Exclusive tasting menus, both with the option of wine pairing. The selection of wines and spirits is wide and pleasantly complements the top gastronomy. Guests also appreciate the classic signature dishes, such as chateaubriand, lobster bisque or crêpe Suzette, which have become a permanent part of the menu and a symbol of consistent quality.
The company's CEO Vít Bartošek (pictured on the previous page) describes the restaurant concept as follows: "At U Malířů we provide a complete experience. Quality, style and elegance are firmly anchored in the philosophy of our operation. We stick to proven recipes that our guests repeatedly request."
