The restaurant at Tellerů is part of the Tady tutů group and shows that even honest Czech cuisine can have a modern and elegant face. The Vinohrady restaurant, located in premises with a theatrical atmosphere, has managed to create an environment where a relaxed pub atmosphere combines with elements of fine dining.
The cuisine is based on the traditions of Czech gastronomy, which chefs David Kalina and David Čížek are pushing in an original and creative direction. Among the appetizers, you will find duck foie gras prepared unconventionally as crème brûlée with a crust of cane sugar and orange peel, or beef tartare with truffle mayonnaise. Also interesting is the "Italian" in a strong broth with horseradish and mustard.
The main courses offer further surprises: fried duck leg croquettes with onion marmalade and orange, crispy cauliflower with a delicate sweetcorn puree baked in the X-Oven charcoal grill, or the restaurant's signature dish - Szeged goulash in a new form. It is served here as pork cheeks prepared sous vide with cabbage-pepper sauce and fried sauerkraut in the form of crispy straws.
Another pillar of the menu are first-class steaks made from two to three-month-old beef, which is matured in the restaurant's own ripening room. An interesting visual element of the interior are the tanks with Pilsner beer placed above the bar, which emphasize the connection with beer culture. The atmosphere is complemented by an extensive wine list and a collection of fruit spirits.
Chef David Kalina is behind the kitchen, who got into cooking as a child while cooking with his mother and grandmother. He trained in Prague at U Krbu and gained valuable experience at the Strahov Sports Complex at the beginning of his career, where he worked alongside master chef Bonaventura, known for his honest Czech cuisine. It was there that his love for traditional sauces and dumplings took root.
David Kalina believes in honesty and quality - from the selection of ingredients to the final presentation. "Always give your guests only what you would eat yourself," says his culinary motto. With food, he wants to bring guests not only taste, but also a good mood and a sense of satisfaction, thanks to which they like to return to Tellerů.
U Tellerů is an establishment that proves that Czech cuisine can be traditional and modern at the same time - and that even in a pub you can cook with elegance and respect.
