The restaurant in Zátiší has been an icon of Prague gastronomy for more than three decades. Since its opening in 1991, it has set the bar for fine dining in the metropolis - top-notch cuisine, impeccable service and a cozy atmosphere have made the establishment synonymous with exceptional experiences. In Zátiší, it has become a place where guests like to return, and it regularly receives recognition from guests and domestic and international guides.
The original menu was based on international specialties, Czech classics and a strong Indian touch associated with the origins of the founder Sanjiv Suri. Later, chef Marek Šáda brought modern Czech cuisine and cooperation with farmers.
Today, Daniel Bureš, a talented chef from Benátek nad Jizerou, is behind the kitchen. He gained experience in fine dining restaurants La Finestra and Bellevue and came to Zátiší as assistant chef. In 2023, he won the tender thanks to his original menu based on the motto "fewer ingredients, more layers of flavor". He uses modern techniques to deepen flavors, experiments with combinations and likes to look for unusual inspiration in nature. His poached siven with sea buckthorn and mushrooms from Kokořínsko is an example of cuisine that honors locality and seasonality.
In the fall of 2024, manager Marek Všelicha also came to the helm, bringing experience from Michelin-starred restaurants in London. Together with Daniel Bureš, they created the concept of the Slavic Compass, which shows the beauty of Slavic cuisine in a modern version. The menu tells stories of the landscape and traditions, is based on regional products and respect for raw materials.
The interior, designed by designer Jitka Třmínková, has also undergone a transformation. The new space evokes a natural still life, in which art, gastronomy and a peaceful atmosphere are interconnected. Part of the new era is also its own field in Letňany, where the team grows varieties of vegetables and herbs in an organic regime.
Restaurant V Zátiší combines a rich history with a modern vision - it offers not only a top-notch gastronomic experience, but also a unique story about Czech cuisine, which is not afraid of innovation while remaining true to its roots.
